Sukkulaðitrufflur

Chocolate Truffles

Chocolate truffles are a confection traditionally served in Iceland during Christmas season.


 
Ingredients

450 g dark chocolate (70%) 

300 ml whipping cream 
70 g honey 
125 g butter
100 g chocolate
Cocoa powder for turning 




Preparation 

Place whipping cream and honey in a saucepan and bring it slowly to a boil.




Chop the chocolate. Add the chopped chocolate to the saucepan, stirring until completely smooth.


Add the butter in small portions and stir thoroughly. 


Spoon the mixture into a rectangular form, preferably lined with cling film...


... and put it into the refrigerator
for 10 to 12 hours. 


Remove the mass from the form and cut it into small, rectangular pieces. 
Melt chocolate in a water bath. Dip the truffles into the melted chocolate and then roll them in cocoa powder. 


Let them dry on baking paper or something similar...



... and keep them cool.

The chocolate truffles taste best fresh and will keep only for 5 to 7 days.
